There are many options for a healthy and vegan breakfast, and one of them is toast. The basis of a good toast is bread: always whole wheat, be it bars, muffins or large slices of round bread. They can carry seeds or flours from other cereals, but the important thing is that we start from a base of whole wheat bread so that our breakfast is healthy.

Then we can think of a lot of toppings that are also super fast. For most you don’t have to cook anything. Here are my favorite options for toast breakfast every day.

1. Classic whole wheat toast with olive oil

With half a bar of wholemeal bread or a large slice of round bread we can make the classic breakfast toasts just by toasting them a little in the pan (or in the toaster) and putting a good olive oil and salt on top.

To give it more flavor and make it more nutritious, you can grate a tomato on top. Always choose very meaty and ripe tomatoes, ideally in season, so that they provide the maximum possible flavor.

2. Avocado toast

If we want to innovate a bit in addition to adding quality proteins and fats, and make the toast much more satiating, we just have to prepare a good whole wheat bread by lightly toasting it and adding sliced avocado with a pinch of salt on top.

Many things go well with avocado, so you can also add some nut cream (peanut, almond, cashew, etc.), pickles (olives, capers, pickles, carrots, etc.) or vegan seed-based cheeses. or nuts.

3. Vegan Cream Cheese Toast

We can spread any large slice of toast with the easiest spreadable vegan cheese : labneh . You just have to put some vegetable yogurts to drain on a cloth, for about 24 hours, then add a little salt and a bit of lemon juice and you have your vegan cheese to spread.

On this homemade labneh you can put both sweet and savory additives. Try combining it, for example, with a tofu scramble, with some slices of tomato or with roasted piquillo peppers. It also goes very well with fruits such as banana, pear, pineapple, strawberries or figs.

4. Toast with a hummus base

If you have hummus already made, it is a very practical option in the morning. You just have to spread your toast with this vegetable paté and that’s it.

On top of the hummus you can also put many salty things that are great for it and that will bring freshness to your toasts: finely sliced cucumber, tomatoes, arugula, lamb’s lettuce, grilled zucchini, avocado, etc., and herbs such as mint, mint or fresh basil.

5. Fruit toast

There are fruits that go very well with toast. For example the banana, for its creaminess, but also the pineapple, the pear, the apple, the figs and the strawberries. Use the fruits that are in season and top your toasts with cinnamon for more flavor.

If you also want them to be hot, you can gratin the toasts for a little while in the oven.

Other options in case you wake up hungry

If you usually wake up hungry, choose more satisfying toasts. For example, grilled tofu or scrambled tofu, to which you can also add debittered yeast. Try combinations of nut butters with hummus and fresh vegetables like tomatoes, cucumbers, onions, or chives.

If you prefer, you can make yourself some toast in the style of an English breakfast by putting on top some cooked beans with tomato, if you have them already made, or from a pot. In the latter case, choose quality ones.
