Ingredients (4 people)

  • 400 g of natural Greek Sojade.
  • 100 g of strawberries.
  • 100 g of blackberries or currants.
  • 1 large yellow peach.
  • 2 apricots.
  • 2 tablespoons of hazelnut oil.
  • 3 tablespoons of maple syrup.
  • One lemon’s juice.
  • Some fresh mint leaves.

For the homemade granola:

  • 100 g of oats.
  • 1.5 tablespoons of coconut oil.
  • 2 tablespoons of maple syrup.
  • 1 tablespoon of pumpkin.
  • 1 tablespoon of flax seeds.
  • 1 tablespoon of sesame seeds.
  • 1 tablespoon of sunflower seeds.
  • 2 tablespoons of whole almonds.
  • 1 tablespoon of golden raisins.

Preparation (Time: 30 minutes)

  1. Preheat the oven to 150 ° C
  2. Melt the coconut oil with the maple syrup over medium heat in a saucepan.
  3. Mix all the seeds in a large bowl, then add the coconut oil and maple syrup that you have heated. The seeds must be well covered.
  4. Place parchment paper up to 1.5 cm thick on a tray and add the mixture.
  5. Let it bake for 30 min.
  6. Once cool, break it into pieces.
  7. While the previous preparation is cooling, wash the fruit and slice the peaches and apricots. If you want, strawberries too.
  8. Emulsify the natural Greek Soybean with the hazelnut oil in a bowl and divide the mixture into four bowls.
  9. Add the fruit and granola pieces.
  10. Mix the lemon juice with the maple syrup and drizzle the result for each preparation.
  11. Garnish with the minced mint leaves and serve immediately.
